This recipe for these warm chocolate cakes came about when one night I wanted to make a delicious quick dessert but had no eggs!!! I decided to press on and make up a chocolate dessert that had everything but the eggs. It was good, but it could have been better. I have refined this recipe like you wouldn't believe and now it's perfect and ready for you to enjoy with someone (or by yourself-no judgement!!) So now these chocolate cakes are my go-to quick indulgent dessert on those nights you just need something a little bit extra. With a melted chocolate centre and a super fudgy crumb, these cakes only take 10 mins to whip up and are ready in just over 30 mins.

2 x ramekins

butter
plain flour
cocoa
baking powder
brown sugar
vanilla
milk
chocolate of choice
Whipped cream or ice cream and fresh berries to serve
Some tips and tricks before you get started
Have all your ingredients weighed and ready to go before starting.
If you forget to take the milk out, just warm it in the microwave for 15 seconds until its room temp. You don't want it hot.
If you want the cakes to bake evenly and the same time weigh out the mixture into the ramekins. There should be 120g-125g per ramekin.
Storage.
The chocolate cakes are best served fresh, however if you do want to make ahead of time they can be stored in the fridge up to 2 days and just reheated in the oven at 150°C for 10 mins
Warm Chocolate Cake for 2
Makes 2
Time: 10 mins prep 20 mins baking + cooling
40g butter (melted)
40g plain flour
20g cocoa
1/4 tsp baking powder
65g brown sugar
1/2 tsp vanilla
90ml milk (room temp)
4 squares of chocolate of choice (I prefer dark chocolate)
Whipped cream or ice cream and fresh berries to serve
Instructions
Pre-heat oven to 170°C
Whisk together flour, cocoa and baking powder in a bowl.
Add in the brown sugar and whisk together
Add in the melted butter and milk and whisk until it is combined and free of lumps
Spray 2 ramekins with oil and divide the mixture between them
Place 2 squares of chocolate in the middle of the ramekins covering it with the mixture
Bake in oven for 20-25 mins until a skewer comes out clean (make sure you're not testing it right in the middle where you placed the chocolate)
Remove from oven and allow to cool for 10mins.
Top with cream/ice cream, berries and dust the top with some cocoa powder.
