Carrot Cake Slice

This carrot cake slice is a take on the classic carrot cake, with a lot more texture and bit more on the healthy-ish side. They are so incredibly easy to make and are the perfect afternoon treat!







 


What equipment do I need to make Carrot Cake Slice

  • 8" x 8" square cake/slice tin

  • Stand mixer

  • Bowls

  • Spoons

  • Scale

  • Palette knife

  • Oven


What ingredients do I need to make Carrot Cake Slice

  • carrots

  • self raising flour

  • eggs

  • ground nutmeg

  • ground cinnamon

  • ground cardamom

  • chia seed

  • brown sugar

  • rolled oats

  • shredded coconut

  • chopped walnuts or hazelnuts

  • olive oil

  • cream cheese

  • butter

  • icing sugar

  • vanilla


Some tips and tricks before you get started

  • Have all of your ingredients weighed and ready to go before starting. This makes sure you have enough of all ingredients and that you actually have the right ones too.

  • Make the cream cheese frosting while the slice bakes.

  • To speed up the cooling of the slice, pop it in the fridge once it has cooled a little bit. You don't want to put a piping hot slice in the fridge.


Storage.

Carrot cake slice is best stored in an airtight container in the fridge. It can be stored up to 1 week in the fridge.

Carrot Cake Slice

Makes 16

Time: 45mins+cooling


Ingredients

3 medium carrots grated

80g self raising flour

3 large eggs

1/2 tsp ground nutmeg

2 tsp ground cinnamon

1/2 tsp ground cardamom

1 tbsp chia seed

100g brown sugar

100g rolled oats

60g shredded coconut

80g chopped walnuts or hazelnuts

125ml olive oil


Cream cheese frosting

125g cream cheese

70g butter

125g sifted icing sugar

1 tsp vanilla



Instructions

  1. Pre heat oven to 190°C

  2. Line an 8'x 8' square cake tin with baking paper

  3. Combine carrots, oats, sugar, flour, spices, chia, coconut, nuts and vanilla together in a stand mixer fitted with a beater attachment for 1 minute

  4. Add in the eggs and oil and beat on low for 2 minutes

  5. Spread into prepared pan and bake for 20-25 minutes until it springs back when lightly pressed.

  6. Allow to cool

  7. To make the cream cheese frosting beat on medium speed the cream cheese and butter for 5 minutes until smooth and free of lumps

  8. Add in the vanilla and icing sugar and beat on medium for 9 minutes until light and fluffy. Scrape down bowl after 2 minutes.

  9. Spread frosting on cooled slice. Slice into pieces and enjoy
