If you want a sweet summery donut, these are for you! They are a fluffy donut filled with vanilla bean glazed in a delicious strawberry and white chocolate glaze which tastes just like strawberries and cream! They are so simple to make and will be a hit with anyone who you put them in front of.

Plain flour
Caster sugar
Baking powder
Milk
Butter
Eggs
Vanilla bean paste
White chocolate
Thickened cream

Some tips and tricks before you get started
Have all ingredients room temperature before getting started.
To speed up the cooling process of the donuts, you can pop them in the fridge or freezer for 30 mins. Don't do this straight from the oven though allow them to cool for a little bit before putting them in the fridge.
If you use a disposable piping bag, cut a hole smaller than you think you will need to prevent a stream of batter flowing out of it and over flowing the donut tins
Substitutions
Milk- Any dairy free milk can be used instead of full cream milk. It will alter the taste slightly depending on what milk is used.
Freeze dried strawberries- If you can't source freeze dried strawberries any freeze dried fruit will work.
Butter- Nuttelex or similar will work in place of the butter.
Storage.
The Strawberry Glazed Vanilla Bean Baked Donuts will last 3 days in an air tight container in the fridge. Or 3 months unglazed in the freezer.

Strawberry Glazed Vanilla Bean Baked Donuts
Makes: 12 donuts
Time: 45mins + cooling
Ingredients
240g plain flour
120g caster sugar
2tsp baking powder
280ml milk
50g butter
2 eggs
1tsp vanilla bean paste
Strawberry glaze
250g white chocolate
110ml thickened cream
15g freeze dried strawberries
Instructions
Preheat oven to 180°C
Grease 2 donut tins with cooking oil
Soften the butter to the point of JUST holding its shape and on the brink of melting. Combine with the sugar in a bowl fitted to a stand mixer with the whisk attachment. whisk on high for 3 minutes. Scrape down bowl with a spatula
Add in the eggs and whisk on medium for 2 minutes
Add in the milk and vanilla and whisk on low until combined. Scrape down the bowl with a spatula
Add in the flour and baking powder and whisk on low until combined.
Fill a piping bag up with your donut mixture and pipe the mixture into the prepared tins
Place the tins in the oven and bake for 10 minutes or until a skewer comes out clean. Allow to cool completely.
While the donuts are baking make your glaze. In a microwave proof bowl place the white chocolate and the cream and microwave in 30 second bursts until completely melted and combined, make sure you are stirring between each burst.
Add in approximately 10-12g of the freeze dried strawberries into the glaze. If you have whole strawberries crush them up into more of a chunky powder, so more of the strawberry flavour will disperse through the glaze.
Once the donuts have cooled dip them in the glaze. Allow any excess glaze to drip off before placing the donuts on a plate or baking paper to set.
Before the glaze sets sprinkle the left over freeze dried strawberries over the top of the glaze.
