The Ultimate Chocolate Chunk Cookies

Everyone has a go to chocolate chunk cookie recipe and this is mine and I can almost guarantee will be yours after you make it! Seriously, they are so easy to make and have the best outcome. These chocolate chunk cookies are crispy on the outside and soft and gooey on the inside. Once you make these, you won't want to make any other chocolate chunk cookies!







 

Some tips and tricks before you get started

  • Do not over mix your dough, mix until there are no more streaks of flour visible. Over mixing will cause the cookies to be too chewy and unpleasant

  • These cookies are SO good fresh, so if you have left them for a couple of days, and want that fresh cookie taste, zap it in the microwave for 15 seconds or warm in the oven at 150 °C for approx 5 mins

  • Use quality chocolate, these cookies will taste 10 x better if you use quality chocolate compared to cheap chocolate. if there is one thing not to skimp on in this recipe its chocolate.









 

The Ultimate Chocolate Chunk Cookies




Makes 24


Time: 60mins



Ingredients

2 eggs

200g dark brown sugar

115g caster sugar

250g softened butter

500g plain flour

1 tsp baking soda

1tsp cornflour

1 tsp vanilla paste

1/2 tsp sea salt + extra for decorating

400g chopped dark chocolate


Instructions

  1. Preheat oven to 200°C

  2. Line 3 cookie trays with baking paper

  3. In a large mixing bowl attached to your stand mixer, using the paddle attachment, cream together the butter, vanilla and sugars on high for 5 mins until pale.

  4. Add in the eggs, one at a time, mixing well before incorporating the next one.

  5. Sift together the flour, baking soda, cornflour and salt then add in to the mixture and mix on low until almost combined

  6. Roughly chop the chocolate into approx 1cm chunks

  7. Add in approx 350g of the chopped chocolate into the dough, reserve the rest for the tops of the cookies

  8. Roll the dough into 24 balls and arrange on the tray ( 8 per tray)

  9. Place the chopped chunks of dark and white chocolate in a bowl and then dip the dough ball in the chocolate, place back on the tray approx 5 cm apart and press down slightly.

  10. Freeze for minimum 30 mins

  11. Put the trays in the oven and bake for 10-13 mins, or until golden brown

  12. While still warm sprinkle with extra sea salt flakes.

  13. Allow to cool and ENJOY!

*** These cookies are SO good fresh but can last up to a week in an airtight container

***** The dough balls can be frozen for up to 3 months in an airtight container
